There are two things I love, my HighPoint Town Square kitchen and vegetarian meals. In fact, I want to share some of my favorite vegetarian recipes with you, starting with breakfast. So without further ado, here are three easy vegetarian breakfast recipes that I hope you’ll love as much as I do.

Banana Coconut Muffins

I love starting my day with muffins, and banana coconut muffins always hit the spot. The ingredients include mashed ripe banana, unsweetened shredded coconut, honey, lemon zest and vanilla extract. It’s a naturally sweet recipe that creates a healthy treat for breakfast. The prep time is 15 minutes, and the bake time is 20 minutes, so it only takes about 35 minutes to make a batch of these muffins.

Scrambled Eggs with Cheese

If you’re short on time, and eggs are in your diet, scrambled eggs with cheese is the perfect meal. You’re going to make this meal with two eggs, cheddar or Monterey Jack cheese, butter or olive oil and salt and pepper. It’s a quick and easy recipe to follow, and when you’re finished, you’re left with soft scrambled eggs with cheese. The prep time is two minutes, and the cook time is three minutes, giving you a delicious breakfast in just five minutes.

Kale Smoothie

Sometimes, you only need a smoothie to kick start your day, and I’d recommend a kale smoothie. For this recipe, you’re going to blend a variety of healthy ingredients, including a kale, pear, banana, agave nectar and vanilla almond milk yogurt. The key is to create a vegetarian smoothie with a hint of sweetness. The total prep and blend time for this smoothie is just 15 minutes.
