Treats to keep you cool by the pool

As many of you know, we were very excited to celebrate the reopening of our pool, here at HighPoint Apartments and enjoyed opening day with some refreshing popsicles by the pool, this past Sunday. To keep the fun going, we thought we would share some tasty treats perfect for enjoying, while relaxing by the pool, all summer long.
The best part is that these delicious treats are hassle free, so with no time to waste, grab your flip flops and sunscreen and get ready for some fun in the sun!
Watermelon & Mint Popsicles

These watermelon mint popsicles are the perfect treat on a hot summer day! Crazy refreshing, easy to make and guaranteed to make you feel ten degrees cooler.
 
Ingredients
Mint Syrup
  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup fresh mint leaves
Popsicles
  • 6 cups watermelon, seedless, cut into chunks
  • 1/4 cup lime juice
  • 1/4 cup mint syrup
 
Instructions
Mint Syrup
  1. In a sauce pan, combine fresh mint, sugar and water.
  2. Cook over medium heat, stirring occasionally, until dissolved and the mixture begins to boil. Once it’s boiling, allow it to boil an additional minute then remove from heat.
  3. Allow this to steep with the mint leaves still in the pan for about 30 minutes.
  4. Strain the syrup through a sieve to remove leaves.
Popsicles
  1. Place watermelon in a blender and blend until it becomes liquid.
  2. In a spouted bowl or large measuring cup, combine watermelon liquid, lime juice and 1/4 cup of the mint syrup. Taste and adjust if necessary.
  3. In a spouted bowl or large measuring cup, combine watermelon liquid, lime juice and 1/4 cup of the mint syrup. Taste and add more lime juice or mint syrup if desired.
  4. Pour the mixture into each mold. Place popsicles sticks, cover and freeze for at least 6 hours or overnight.
  5. To remove the popsicles, run each under warm water and gently pull on the stick until it easily slides out.
Kool-Aid Slushy

As far as recipes go, you cannot find an easier one than this! What’s even better is that this slushy is so delightfully refreshing and your kids are sure to love it. You can even try mixing Kool-Aid flavors for to create a fun new flavor!
Ingredients
  • 2 cups of cold water
  • 1 Kool-Aid packet
  • 1/2 cup of sugar
  • 4 cups of ice
Instructions
  1. Combine ingredients in a blender
  2. Blend until all the ice is crushed and smooth
Brownie Ice Cream Sandwiches

Create delicious homemade brownie ice cream sandwiches, using your go to homemade brownie mix and your favorite flavor of ice cream, to create the perfect Summer treat! These Brownie Ice Cream Sandwiches are fudgy, creamy, sweet, and oh so indulgent!
Ingredients
  • Brownie mix
  • Favorite flavor ice cream
Instructions
  1. Start by preparing your homemade brownie recipe as you normally would and separate the batter in half. By baking the layers individually you avoid having to manually cut the entire thing in half, which is difficult and unnecessary.
  2. Bake in Two 8×8 Pans or one layer at a time. To save time, it’s recommend that you bake both layers at the same time. But, if you don’t own two of these pans, it’s perfectly fine to bake them one at a time. Just be sure to cover the second half of batter as the first half bakes. Once out of the oven, use the parchment paper to carefully lift the layer out of the pan, then wipe it clean. Line the pan with more paper and bake the second half.
  3. Allow both layers to cool completely, before piling on the ice cream, to prevent the ice cream from melting.
  4. While the brownies are cooling, remove the ice cream from the freezer and let it thaw for a bit. Run a large spoon under hot water,  then spoon the ice cream onto the bottom layer of brownie. Smooth the ice cream with the back of the spoon (or by using a spatula) until it’s all in one even layer.
  5. Place the Second Square of Brownie On Top. Gently press the second layer on top of the ice cream, making sure that it’s snug.
  6. Use aluminum foil to tightly cover the pan and freeze the whole thing for at least 12 hours. Overnight is best!
  7. Carefully use the parchment paper to lift the entire block out of the pan. Run a knife under hot water, then slice into eight evenly sized squares. You’re gonna need to use a little arm muscle! If the ice cream begins to melt too quickly, place the whole thing back in the freezer, wait 5 minutes, then try again.
Frosted Lemonade

Rumor has it that if you love Chick-fil-A’s frozen lemonade, you need to try this recipe. This simple recipe is definitely mouth watering and refreshing!
Ingredients
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 cup sugar
  • 2 cups water
  • 6 cups vanilla ice cream
  • sliced lemons, for garnish
Instructions
  1. Mix lemon juice and sugar together in a pitcher until the sugar is fully dissolved. Add water to dilute and place it in the fridge to chill.
  2. Add the lemonade and ice cream into your blender. Blend until smooth and divide among 3 cups.
  3. Garnish with slices of lemon and serve.
